So once you are done with the introductory quest and have unlocked Fieldwork, you can head to The Last City.
Once you are there, you can head to the Tonic Labrotary and talk to Eido.
There, you can take on the Minor Fieldwork I and II: Europa quests along with many others from the Fieldwork menu.

Minor Fieldwork I: Europa Mysterious Object location
In Destiny 2, you can find the Mysterious Object required for Minor Fieldwork I: Europa near the Lost Sector at Perdition.
I have marked the precise location of the Mysterious object above.
Teleport to the Charon’s Crossing waypoint and make your way to Perdition.
Inside the cave-like area, on the floor in the encircled spot, you will find the Mysterious Object.
Interact with it to collect the item and progress or complete the quest.
Minor Fieldwork I: Europa Mysterious Object location
The Mysterious Object required for Minor Fieldwork II: Europa in Destiny 2 is found at the entrance of Bray Exoscience.
Head to the marked area in the above map screenshot.
Near the encircled area, on the ground, you will find the Mysterious Object.
Once again, interact with it to collect it.
